HARVEST

We cultivate the coffee under the shade of native trees because it is the most ecological and economical manner not to disrupt Mother Nature. The trees serve numerous purposes. On the one hand, these play their obvious role as sun screens protecting the coffee plants from the severity of the sun rays. On the second hand, with the natural fall and decomposition of their leaves on the ground, these supply with rich mulch to the coffee soil.

Finally, the trees more than being simply a natural fertilizer, with their mulch they contribute to the suppression of weed growth and the prevention of running off soil during the rainy seasons. As a result there is no need for chemical fertilizers or herbicides.

CROP

The regular crop takes place between the months of April and September; the red and mature grains are hand-picked and separated from the young ones. One coffee cherry is taken at a time allowing us to make sure of the quality of our product.

PROCESS

1. The cherries get to the pulper where the outer skin is mechanically removed. This is carried out through the running of water. After the outer skin is removed parchment and mucilage is left, the mucilage prevents damage to the bean, and the water acts as a lubricant in the pulper. The water also helps in cleaning off the cherries.

2. Fermentation takes place in special basins after the outer skin and fruit have been mechanically removed. This fermentation loosens up a thick sticky layer that remains on the beans, allowing it to be washed off before the beans are dried on the farm.

3. For the washing we employ clear water placed on basins made of concrete, this process allow us to clean the coffee beans and to separate the good of the bad beans.

4. The drying occurs under a sunny sky.
